The only way a cannon could fire on a fort without being in range of the fort's own cannons was to shoot at the point of the star which was structurally reinforced at the tip.

It allows each bastion to cover the other walls. If you've ever been to a star fort its pretty cool to see from up close the benifits.

Of course, the only reason that is was designed so symmetrically is because there were no natural landscape formations to take advantage of, such as a hill or river. The best forts of that design take that into consideration, and so are a little less... breathtaking.
